I was worried about trying this sauce since it has heavy cream. I’m not a big fan of cream bases sauces, but I am a fan of lemony, garlic sauces, so I thought why not give it a go?!
This only takes a little bit of prep time. The sauce was much easier than I originally thought it would be, too! I tasted it as it was thickening up, and was shocked at just how yummy it was. I yelled to get my husband into the kitchen, which honestly in hindsight was silly since I should have kept it all to myself! We both loved it!
Only changes I made was to add capers and sun-dried tomatoes. I have this tendency to want them in any meal that has lemon and feta! Fortunately, they worked beautifully, so I would say, if that sounds good to you, add it to your ingredients list.
- 4 boneless skinless chicken breasts (or thighs)
- salt and pepper
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon minced garlic
- ½ teaspoon red pepper flakes (or more to taste)
- 1 tablespoon olive oil
- ⅓ cup finely diced shallots (or red onions)
- 2 tablespoons salted butter
- ¼ cup heavy cream
- 2 tablespoons chopped parsley or basil
Interestingly, I was curious, being new to cooking and all, why this was not called Chicken Piccata? I love ordering piccata at a restaurant and this sauce is a perfect mirror of it. Seems that piccata is actually the act of cutting the meat, coating it, and then cooking it in the sauce. So, this is actually a healthier version, and trust me, it is still super freaking yummy!
