What’s happening here:

Readathons! Dewey’s Readathon was yesterday which means hopefully by the time this posts I’m sleeping! This has been a really weird week. The hubby is having a hard time with work and losing his Dad. We’re both stressed to the gills but being really positive about home life, which is awesome. Found a baby possum in our garage that our new pup, Monty, was harassing. Paul obviously didn’t let me feed the little guy… Insert sad face here. He was freaking cute.

I got to read some fabulous books and cooked some wonderful meals but otherwise we sort of just vegged. So glad this week is over. Let’s just all hope that this upcoming week will be much better. We do not need any reappearances of 2016. NO. THANK. YOU.

What’s Cooking:

This week:

This was not a good week for food. We wound up getting pizza after spending nearly $200 in groceries. FOR THE WEEK. We tried a new spaghetti sauce that I wound up hating. I love experimenting but sometimes you just have to eat what you know. At least my hubby liked it. He had lunch for the entire week!

Chicken Al Forno:

I realize this picture does not look appetizing. Basically it’s roasted chicken with tomatoes over mashed potatoes. Nothing to really write home about. It was interesting a little but also kind of weird. The verde sauce had anchovy paste. It was so fishy that I added more lemon, salt, and olive oil to calm the taste down. I ate it with each little piece of the meal and while we both liked it, it’s not something we will probably make again.

Chicken Paillard Salad:

This wasn’t much better. Fortunately the hubby loved this one and took the leftovers, which was half of my meal, for lunch.
